I was processing a few broilers yesterday. I prefer to skin mine. As I worked the skin down one of the wings past the elbow the next section of the wing was swollen, dark greenish muscle and a yellowish-greenish mucous was dripping out. The rest of the chicken was completely normal. Does anyone know what this is? And can we eat the rest of the chicken?
