If the eggs do not hatch in 21 days how long should I leave the eggs in the incubator?

Now keep in mind, I only hatch eggs as a hobby. My kids love to watch when they start hatching and thru the brooder. But my experience in a small styrofoam incubator was anywhere from 19-28 days, depending on humidity. Now I have a large commercial incubator and I have gotten them from 20-25 days. Hope this helps as I am only a hobbyist hatcher. I'm sure someone else will know more about this than I, but this is what I have experienced myself.
